Rye cookies with rice molasses, ginger and caraway seeds

This year Christmas baking includes just 7 varieties of cookies, I will share some of my favourites. This recipe is amazing because I like everything about rye flour and molasses, my most often baked sourdough bread is rye bread too.

Ingredients
(makes 32 cookies)
113g of chilled unsalted butter at room temperature
1 1/2 cup of brown sugar
1 egg and 1 egg yolk
1/3 cup rice molasses (can be substituted by wheat molasses)
2 2/3 cups of rye flour (and no, you can’t substitute it with other flour :D)
1 1/2 tsp baking powder
1 1/2 tsp salt
2 tsp caraway seeds
1 tsp ground caraway
1/2 tsp ground ginger
sesame seeds for decoration (not necessary)

Method
1.Combine sugar and butter in a bowl of a standard mixer and whist together until glossy for 3 minutes. Add an egg and an egg yolk and whisk just to combine for 1 minute. Then carefully add molasses and whisk for another minute.
2. Add all dry ingredients and whisk on a lower speed for 1 minute. Then knead the dough with your hands to combine it perfectly. Wrap the dough into foil and let it chill in the fridge for at least 1 hours.
3. Form 30g balls from dough, press them a little bit from top and bottom and sprinkle with sesame seeds. Put cookies on a baking tray with enough distance between each cookie.
4. Bake for 12 minutes in the oven preheated to 180C.
Let the cookies cool completely. Store in a closed container.

🇸🇰 Pre všetkých, ktorí máju radi ražný chlieb: Ražné sušienky s ryžovým sladom a rascou
113g zmäknutého masla
1 1/2 hrnčeku hnedého cukru
1 veľké vajce
1 žĺtok
1/3 hrnčeku sladu
2 2/3 hrnčeku múky
1 1/2 čl kypriaceho prášku
1 1/2 čl soli
2 čl celej rasce
1 lyžička mletej rasce
1/2 čl mletého zázvoru
sezam na posypanie (nemusí byť)

1. Vymiešame maslo a cukor v miske kuchynského robota dohladka. Pridáme vajíčko a žĺtok a miešame na 3-4 rýchlosti asi minútu. Opatrne pridáme slad a miešame ešte minútu, kým sa všetko nespojí.
2. Pridáme do misky všetky zvyšné ingrediencie a miešame 1 minútu. Aby sa všetko lepšie spojilo, môžeme si na konci pomôcť rukou. Vymiešané cesto zabalíme do igelitu a odložíme na hodinku do chladničky odpočinúť.
3. Z cesta vytvarujeme 30g guľôčky, ktoré jemne pritlačíme aby boli viac ploché a obalíme ich v sezame. Guľôčky poukladáme (nie príliš blízko k sebe, počas pečenie sa trochu roztečú) na plech vystlaný papierom na pečenie. Pečieme 12 minút v rúre prehriatej na 180C.
Tato dávka cesta ja na 32 sušienky.
