Linzer dough cookies with jam filling and nut meringue

This recipe is typical for Western Slovakia (at least I was told so), but I believe that it deserves to be more widely known. These cookies are really fantastic and I’ve baked them for a few times during winter holidays as they have a tendency to be eaten first.

Ingredients
(makes 36 cookies)
Dough
270g of white of spelt plain flour
140g of unsalted chilled butter
3 egg yolks 3 egg whites
baking powder on the end of the knife
60g of powdered sugar
Nut meringue
3 egg whites
140g of powdered sugar
120g of very finely chopped nuts (I used walnuts, but you can take
pecans or whatever you like)
1 tsp of lemon zest
pinch of salt

Jam of your choice for filling

Method
1. In a bowl of  a standing mixer combine all dough ingredients for 1 minute until well combine, don’t over knead. I always prefer to finish combining with hands. Cover the dough into foil and let it chill in the fridge for 1 hour.
2. Roll chilled dough in 0,5cm layer and cut with a round cutter. Add half tsp of jam into the centre of every round.
3. Clean the bowl, make it dry and whisk egg whites with a pinch of salt to steady peaks. Add sugar spoon by spoon, mix with a spatula and then add nuts with lemon zest. Transfer the mixture to the pastry bag with  a wide tip and squeezed it around the jam.
4. Bake for 20-25 minutes in the oven preheated to 160C (it takes longer to make meringues dry).
These cookies can be stored up to one week in a closed container.

🇸🇰 Keďže som dostal viac otázok na tieto linecké kolieska s orechovým snehom, pridám recept 🙂
Na cesto: 270g hladkej múky (špaldovej alebo pšeničnej), 140g zmäknutého masla, 3 žĺtka, 60g práškového cukru a kypriaci prášok na konček noža. Všetky ingrediencie spojíme, vymiešame cesto a odložíme ho do chladu aspoň na hodinku.

Cesto rozvaľkáme na hrúbku 4-5mm a vykrojíme kolieska, ktoré položíme na plech vystlaný papierom na pečenie. Do stredu každého kolieska dáme čl lekváru (tento rok som mal jahodový).

Pripravíme orechový sneh: 3 bielka vyšľaháme so štipkou soli, potom opatrne zamiešame práškový cukor (140g), 120g mletých orechov (mal som zmes vlašských a lieskovcov) a 1 pl citrónovej kôry (môže byť aj suchá). Snehom naplníme cukrárske vrecúško a vytlačíme ho na kolieska.

Kolieska pečieme 20-25 min na 160C (nie menej, sneh sa musí upiecť).
Jedna dávka – cca 36 koláčikov 🙂
