Roasted pumpkin soup with coconut milk

It’s a pumpkin season and I surprisingly turned out to be a big lover of everything made with pumpkin. Today I will share a very easy recipe of pumpkin soup, that is already added to my collection of autumn comfort food. (🇸🇰 slovenský preklad nájdete za anglickým textom). Ingredience

(for 4 portions and I don’t give exact proportions because comfort food can’t be cooked with very precise measurements)

1 middle sized butternut squash

2 middle sized yellow onions

1 clove of garlic

2 middle sized carrots

1l of any chicken or vegetable stock

1 can of coconut milk (I had 165ml can, but you can add more, because it’s never too much of a good thing).

vegetable oil, salt, black pepper, ginger powder, a few slices of chilli (optional), ground nutmeg.

Direction

  1. Peel and deseed pumpkin, cut into 3cm slices and bake in the oven preheated to 200C until soft (at takes around 20minutes or so).
  2. Meanwhile, mince onion and dice garlic, mix together and sauté with vegetable oil in a big pot until soft. Add carrot sliced in any way you like and pour stock into the pot.
  3. Cook until carrot is soft, than take the pot from the heat and let it cool a little bit.
  4. Add pumpkin, coconut milk, salt and all the spices to the pot and mix together with a hand mixer until smooth.
  5. Add some more water if you like it more liquid.

I like to serve this soup with roasted pepitas, sesame seeds and slices of chilli. Pro tip: add a few drops of pumpkin oil to make your pumpkin soup really special.

🇸🇰 Tekvicová polievka s kokosovým mliekom

Potrebujete:

1 stredne veľkú maslovú tekvicu,

2 žlté cibule, 2 mrkvy,

strúčik cesnaku,

1L vývaru,

malú plechovku kokosového mlieka (165ml, ale môžete kľudne dať aj viac).

Na ochutenie: soľ, čierne korenie, mletý zázvor, muškátový oriešok.

Postup 🎃

Tekvicu ošúpeme a nakrájame na 3-4cm hrubé plátky, ktoré upečieme v rúre domäkka pri 180C. V hrnci speníme cibuľu a cesnak, pridáme nakrájanú mrkvu, vývar a varíme, kým mrkva nezmäkne. Potom pridáme tekvicu, všetko premiešame a necháme chvíľu vychladnúť. Do hrnca pridáme kokosové mlieko, soľ a koreniny a všetko rozmixujeme ručným mixérom nahladko 🙂 ak bude polievka príliš hustá (môj klasický problém 🙈) môžete ju trochu rozriediť horúcou vodou.
