Matcha tea and pistachio cookies

I decided not to wait till Christmas to bake other cookies and this week I started with these exotic looking, but simple to make, matcha tea and pistachio cuties.  Their green color caused a lot of questions from my friends who tried them. There were plenty of ideas of the color source, from spinach and broccoli to weed 🙂 No folks, it’s just green tea 🙂

Ingredients (make up to 20 cookies)

50g of all purpose flour (I used T812 spelt flour which is my favorite substitute for white flour)

70g of brown sugar

70g of melted unsalted butter

65g of almonds flour (here comes a note that will not be approved by professional bakers, but I’m not a professional baker yet, so I can allow myself to make such notes: you can substitute almonds flour by any kind of nuts flour, especially by one made from pistachio)

5g of matcha tea powder

2g of baking powder (half of tbs)

 A pinch of salt

1 egg yolk

whole unsalted roasted pistachios (enough to decor 20 cookies)

Method

  1. Using a mixer, whisk an egg yolk, sugar, a pinch of salt and butter until smooth. (if the butter is melted properly, it’ll take about 2 min on medium speed).
  2. Combine flour, matcha tea powder and baking powder in a bowl and pour these ingredients to the bowl with butter and sugar texture. Whisk for a minute to combine on a low speed.
  3. Add sifted almond flour to the bowl and mix to combine again.
  4. Transfer the dough to a layer of plastic wrap, cover it with another layer, roll out a little bit and place to a freezer for half an hour. This dough is quite sticky so spatula will be very useful.
  5. Split the cooled dough into equal portions (13g in my case) and form cookies. Press whole pistachios on the top of each one. Place cookies to a baking form covered with parchment paper with a few cm distance between each cookie.
  6. Bake 20 minutes in an oven preheated to 160C. As soon as you place the cookies into the oven, decrease the heat to 120C.

Tastes great with a cup of espresso.

Postup
V miske zmiešame 50gr múky (ja som mal ako vždy hladkú špaldovú T812), 5gr matcha čaju, 2gr (polku čl) prášku na pečenie.
Vyšľaháme spolu 70gr cukru, 70gr zmäknutého masla, štipku soli a žĺtko z jedného vajcia (stredná rýchlosť, 2-3 minúty), pridáme suché ingrediencie a miešame ešte minútu, aby sa všetko spojilo.
Pridáme mleté mandle* (65g) a miešame ďalšiu minútu. Cesto opatrne zabalíme do fólie a dáme chladiť do mrazničky na polhodiny.
Nasledovne cesto vyberieme a rozdelíme ho na rovnaké časti (ja som mal 13gramové), s ktorých vytvarujeme rovnaké keksíky. Do každého keksíku vtlačíme celé nesolené pistácie (kľudne aj 5-6ks).
Uložíme na plech s dostatočným odstupom od seba. Pečieme 20 minút v rúre predhriatej na 160C. Teplotu znížime na 120, akonáhle dáme cookies do rúry.

*madľovú múku môžete nahradiť orechovou plnkou, ale ak ju nahradíte pistáciovou múkou, bude to dokonalé
