Sweet potatoes and sheep’s milk cheese salad

Another perk of May here in Bratislava is arrival of fresh “May made” bryndza sheep’s milk cheese, one of the staples of Slovak cuisine. I welcome it gladly and buy this bryndza every Saturday at farm market. Here is a recipe of a simple salad featuring bryndza and sweet potatoes. (🇸🇰 slovenský preklad nájdete za anglickým textom).

Ingredients (for 2-3 portions)

250g of sweet potatoes

100g of bryndza or any other fresh soft goat cheese

80-100g of rocket or mizuna salad (whole uncut leaves or cut on halves, depends on the size).

2-3 tbs of salad seed of your choice

olive oil, salt and black pepper for seasoning.

Directions

  1. Peel sweet potatoes, cut them into 2cm slices, season each slice with olive oil, salt and pepper and transfer put into a form with baking paper. Bake for 25 min in the oven preheated to 200C until slices become soft. Let baked sweet potatoes cool for a few minutes.
  2. Cut sweet potatoes into 2-3cm cubes and mix with the salad in the bowl.
  3. Make a dressing: combine 1tbs of cheese with olive oil, salt and pepper in a cup or mug, whisk to combine and add the mixture to the bowl with the salad. Be careful with the salt as some kinds of sheep cheese are already quite salty.
  4. Add the seeds and crumbled cheese to the bowl and shake to combine.

Serve immediately.

🇸🇰 Šalát zo sladkých zemiakov a májovej bryndze
250g sladkých zemiakov
100g májovej bryndze
80-100 g rukoly alebo mizuny
2-3 PL mixu semienok na šaláty
olivový olej, soľ a čierne korenie

Postup
1. Sladké zemiaky ošúpeme a nakrájame na 2cm plátky, každý plátok potrieme olivovým olejom, osolíme, okoreníme a prenesieme do formy s papierom na pečenie. Bataty pečieme asi 25 minút v rúre predhriatej na 200°C, až kým nebudú mäkké. Upečené sladké zemiaky necháme niekoľko minút vychladnúť.
2. Sladké zemiaky nakrájame na 2-3cm kocky a premiešame so šalátom v miske.
3. Urobíme dresing: zmiešame 1čl bryndze s olivovým olejom, soľou a korením, vyšľaháme a pridáme do misky so šalátom. Neprežeňte to so soľou 🙂
4. Pridáme semiačka, bryndzu a všetko dobre premiešame.
Podávame okamžite, kým sú sladké zemiaky ešte teplé.
