White beans, mushrooms, sausage and kale soup

It is cold here in Slovakia (around -15C in the morning) thus a big bowl of a hot soup is something to dream about. So I decided to taste a new soup recipe and to use dried mushrooms we gathered in Nová Baňa in autumn. Once again, it was success from the first try (considering amount of the cooking f%ckups I usually have, 2 good recipes in a row is a very exciting result).

Ingredients
1 middle sized onion
1 middle sized carrot
2 cloves of garlic
2/3 cup of dried mushrooms (I used fungi porcini)
400g of cooked white beans (you can use canned beans, but I made it from the scratch)
300g of sausage (I used local version of chorizo, if you a vegetarian, just skip it without regrets)
3 cups of chopped kale
1,5l of vegetable stock (notice, you can cook vegetable stock with the water where dried mushrooms were soaked, I made it and the stock was rich and flavour)
1/2 glass of a dry white wine (you can cook without any wine, but it gives the soup more reach taste)
1 tbs of dry rosemary
salt, black pepper
olive oil

Directions
1. Cook minced onion until almost transparent in a pan with a few drops of olive oil. Add chopped carrots, minced garlic, rosemary, season with salt and pepper and cook on a medium low heat stirring occasionally until carrots are semi soft
2. Pour white wine into the pan, decrease the heat and let the wine to be almost reduced. Turn the heat off and set the pan aside.
3. Bring stock to boil, add beans, kale and onion with carrots. Reduce the heat to low and let the soup simmer for 15 minutes. Take out the foam from the surface if any appears.
4. Slice the sausage and slightly fry it on the pan, than add to the soup.
5. Stir the soup properly, try it and add more salt if necessary.
And, surpise-surpise, I will not finish this recipe with my “serve with sour cream” mantra. It’s perfect as it is.

🇸🇰 Polievka s bielou fazuľou, kučeravým kelom, hubami a klobásou
Ingrediencie
1 stredne veľká cibuľa
1 stredne veľká mrkva
2 strúčiky cesnaku
2/3 šálky sušených húb (použil som dubáky)
400 g varenej bielej fazule (môžete použiť aj fazuľu z konzervy)
300g bravčovej klobásy (ak ste vegetarián, tak klobásu môžete kľudne vynechať)
3 šálky nakrájaného kelu
1,5 litra zeleninového vývaru (ja som uvaril vývar vo vode, v ktorej sa namáčali dubáky a bol veľmi podarený)
1/2 pohára suchého bieleho vína (môžete variť aj bez vína, ale víno dáva polievke viac chuti)
1 čl sušeného mletého rozmarínu
soľ, čierny korenie
olivový olej

Postup
1. Cibuľu nakrájame na jemno a orestujeme do mäkka na olivovom oleji. Pridáme nakrájanú mrkvu, pretlačený cesnak, rozmarín, posolíme, okoreníme a restujeme na menšom ohni za občasného miešania, kým mrkva nebude polomäkká.
2. Na panvicu pridáme biele víno, znížime oheň a víno necháme skoro vypariť.
3. Do vriaceho vývaru pridáme bielu fazuľu, kel, huby a opraženú cibuľu s mrkvou. Znížime teplotu a necháme polievku 20 minút vrieť.
4. Klobásu nakrájame na kolieska, trochu opražíme a pridáme do polievky.
5. Polievku dobre premiešame a v prípade potreby trošku osolíme.
