Chickpea flour pancakes with dates and banana

This recipe starts series of recipes that will be featured in the Breakfast chapter of my cookbook. I like everything with dates so the idea to cook date pancakes was interesting to me from the very beginning. The result was just amazing.

Ingredients

(makes 10-12 pancakes)

1 cup of flour (I used 50/50 mix of chickpea and whole spelt flour, but you can substitute it for any flour you have)

1 cup of milk

0,5 tsp of baking powder

0,5 tsp of vanilla extract

5 dates (pitted, fresh or dried)

half of a ripe banana

pinch of salt

sour cream, honey, dried  fruit for serving

Directions

  1. Dice dates in a food processor, add banana and grid together. Add the rest of the ingredients and process until you get a smooth texture.
  2. Heat a non stick pan properly with a little bit of vegetable oil on a medium heat. Spoon the dough into the pan leaving enough space between pancakes. Cook for 1 or 2 minutes until bubbles appear on the top, then flip and cook for another minute or two.

Serve warm with sour cream (yes, it’s my Ukrainian heritage, I will prefer sour cream to whipped cream), honey and fruit.

🇸🇰 Banánovo-datlové dolky
(na 10-12 kusov)
1 šálka múky (použil som 50/50 zmes cícerovej a celozrnnej špaldovej múky, ale môžete ju nahradiť akoukoľvek múkou, ktorú máte doma)
1 šálka mlieka
0,5 čl prášku na pečenie
0,5 čl vanilkového extraktu
5 datlí (bez semiačok, čerstvé alebo sušené)
polovica zrelého banánu
štipka soli
kyslá smotana, med, sušené ovocie na servírovanie
Postup
1. Datle rozdrvíme v mixéri, pridáme banán a zamiešame ovocie spolu. Pridáme zvyšok surovín a mixujeme, kým cesto nebude mať hladkú textúru bez hrudiek.
2. Dolky pražíme na dobre zohratej panvici s pár kvapkami oleja približne 1-2 minúty z každej strany.
Podávame teplé s kyslou smotanou (alebo šľahačkou), medom a ovocím.
PS: ak stále nepoužívate cícerovú múku, odporúčam ju vyskúšať. Najme kvôli tomu, že obsahuje 22 g bielkovín v 100 g múky.
