Roasted Brussels sprouts with bacon and walnuts

We had “an autumn feast dinner” with friends last Saturday and roasted duck was the main star of the menu. There are 2 classic side dishes for roasted duck here in Slovakia: braised cabbage and “lokše” thin pancakes made of potato dough. As a “cabbage freak” I decided to add one more side dish to the menu: roasted Brussels sprouts with bacon and walnuts. Well, it’s Thanksgiving classics, but this recipe is not known here. The most popular comment about this dish was “oh, I’ve hated Brussels sprouts since school times, but you made it really delicious”. So mind this recipe if you also have “cabbage haters” among your friends.

Ingredients:
(makes 4 portions)
150g of bacon
3 tbs of minced walnuts
450g of Brussels sprouts (I used frozen)
Olive oil, salt
Direction:
1. Steam Brussels sprouts for 10 minutes. Don’t overcook it. Cut Brussels sprouts into quarters lengthwise and set aside.
2. Cut bacon into 0,5cm cubes and roast in a saucepan with a drop of olive oil on a medium heat.
3. It will take about 5-7 minutes until that nice smell of fried bacon appears. Then add minced walnuts, stir and roast for another few minutes to warm the nuts.
4. Low the heat, add Brussels sprouts to the pan, stir and roast for 5 minutes.
Serve warm and be ready to answer to a comment that it’s surprisingly good.

🇸🇰 Ružičkový kel so slaninou a vlašskými orechami.
Udusíme na pare 450g ružičkového kelu (ja som mal mrazený) a nakrájame ho na štvrtiny. 150g slaniny nakrájame na 0,5cm kocky a opražíme na panvici s kvapkou olivového oleja na miernom ohni asi 5 až 7 minút, pokiaľ slanina nezačne krásne voňať. Následne pridáme 3 polievkové lyžice nadrobno nesekaných vlašských orechov a orestujme zmes ešte pár minút, aby sa orechy prehriali. Zmenšíme oheň a pridáme ružičkový kel. Všetko spolu necháme na ohni na ďalších 5 min. Servírujeme teplé, napríklad ako prílohu ku kačici.
