Spelt galette with sweet potato, beet and caramelized shallots

I wanted to try this recipe not only because of the filling, that is of course delicious, but also because of the dough. It’s choux pastry variation and as I haven’t had any experience with it, I was excited to try it. I can’t describe how pleasant is to work with this dough. I made it ‘half spelt’ and even despite it the dough was amazingly elastic.

Ingredients
(for 4 portions)

For dough:
100g spelt flour
120g all purpose flour
120ml boiling water
50ml vegetable oil
1 pinch of salt
2 pinches of dry rosemary

For filling:
150g shallots
250g sweet potatoes
250g beet
parmigiano (can be substituted with goat cheese or Slovak bryndza. You just need to add some cheese)
butter, salt, black pepper.

Directions:
1. Make the dough: mix all dry ingredients, add boiling water and oil and knead the dough. You will be surprised how elastic spelt dough can be. Cover the dough with plastic foil and let it rest for 30-40 minutes.
2. Meanwhile make the filling. Caramelize (fry on a low heat) shallots cut into thin rings until they become soft.
3. Peel and cut beet and sweet potatoes into very thin slices (use mandolin cutter if you have it).
4. Roll out the dough into a square, leave aprox. 5cm from each side and add a layer of shallots. Cover with the amount of cheese that is suitable for you and then add a layer of vegetables. Sprinkle butter on the top and season with salt and pepper.
5. Cover the filling with “the frame” dough and bake for 30 min in the oven preheated to 180C.

This galette tastes great both cold and warm.

🇸🇰 Špaldová galeta so sladkými zemiakmi, karamelizovanou šalotkou, cviklou a parmezánom.

Postup: zmiešajte 120g bielej múky, 100g špaldovej múky, štipku soli a dve štipky suchého rozmarínu. Dobre premiešajte, pridajte 120ml vriacej vody a 50ml rastlinného oleja. Vypracujte cesto a nechajte ho odpočinúť cca 30 min. pod čistou utierkou. Pokiaľ cesto odpočíva, vyrobte plnku. Opražte domäkka 150g šalotky (ktorú prípadne môžte nahradiť červenou cibuľou) a na tenké plátky nakrájajte (musia byť ozaj tenké, inak sa neupečú) sladké zemiaky (250g) a cviklu (tiež 250g). Cesto rozvaľkájte do tvaru obdĺžnika a dájte naň vrstvu cibule, ktorú posypte parmezánom alebo iným tvrdým syrom. Okolo plnky nechájte cca 5cm široký okraj cesta. Ďalej uložte sladké zemiaky a cviklu. Osoľte, hore položte pár kúskov masla a kraje založte smerom dovnútra. Pečte v rúre rozohratej na 180° asi 30 min.

Táto galeta výborne chutí aj horúca aj studená.
