Beet hummus with chili flakes

It’s time to take a quick break from pumpkin recipes (I still have a few to post here as they are really good). Last week I was asked to share my favourite beet recipe in one of  the most popular Slovak cooking magazines. I didn’t want to write about borscht, although I like it. Such choice is too obvious for Ukraine born food blogger, isn’t it? So my choice was easy and tasty beet hummus with chili flakes.

Ingredients

* middle sized beet, roasted and peeled
* 1 and 3/4 cup chickpeas (I prefer to soak dry chickpeas overnight and than cook it for an hour, but I will keep it a secret if you use canned chickpeas)
* 2 tsp tahini
* 2 cloves garlic
* 1 tsp ground cumin
* 1/4 cup olive oil
* juice from 1 lemon
* peel from a half of lemon
* pinch of chilli flakes
* salt
Directions: mix all ingredients together with a blender until smooth, add olive oil and stir by hand properly. Add a pinch of chilli flakes if you like it hot.

Recept (4 porcie)
1 stredná cvikla, upečená a olúpaná.
1 a 3/4 hrnčeka vareného cíceru
2 kopcovité čajové lyžičky tahini pasty
2 strúčiky cesnaku
1 čajová lyžica mletej rasce
šťava z polky citróna
1/4 hrnčeka panenského olivového oleja
kôra z jedného citróna
soľ, čierne korenie, malá štipka mletého chilli
Postup
Rozmixujte cviklu na pyré a postupne pridávajte ostatné ingrediencie
okrem olivového oleja. Všetko spolu rozmixujte na hladkú hmotu. Na
konci pridajte olivový olej a zmes dobre vymiešajte lyžicou. Ak je
hummus príliš hustý, pridajte ešte pár lyžíc vody.
