Spaghetti with tomato and calamari

I’m back from “a kind of holidays” in Croatia. Why “a kind of”? Well, it’s a long story. First, some of my customers need almost every day attention and I have to be “always there” and online. Second, short before the trip I’ve got a  proposal to join exciting cooking and photography book project. Deadline is in September so I preferred not to hesitate and already started to make pictures in Croatia, which means that I was both cooking for myself and friends and also for this new book. As a result, I’ve spent quite a lot of time in the kitchen. But I can’t complain as cooking with south vegetables and olive oil from local market was a pleasure. I promise to write a big post about the book as soon as it is finished  🙂 Now it’s time to share the first of my Croatian recipes. I’ve made pasta with calamari for our “welcome” dinner and it had a great  success.

Ingredients
(makes 4 portions)

400g of cleaned fresh or frozen calamari (or squids)

 1 big onion

1 clove of garlic

1 big tomato

400 g of spaghetti

olive oil, salt, black pepper (I also added pinch of Provence herbs but it’s up to you. and yes, I travel with my favourite spices)

Directions

  1. Cut calamari into rings and boil for 1 minute in salted water. Don’t overcook it, otherwise calamari will have texture and taste of the gum.
  2. Dice onion and cook it on a big pan with olive oil on a medium heat until onion is tender.
  3. Blanch and peel tomato, chop and add to the pan with onion, mix all together.
  4. Add minced garlic and stew for 5 minutes, then add calamari, mix properly and turn the heat off.
  5. Cook spaghetti (will you need an instruction for that?), strain properly and add to the pan with calamari. Mix properly. If the dish is not worm enough, turn the heat on and worm it stirring continuously for a few minutes.

You can serve this dish with fresh basil, but I don’t like to combine delicate sea food with basil strong flavour, so I will just inform you about this option.

🇸🇰Špagety s paradajkami a kalamármi.
Na 4 porcie:
400g očistených kalamárov (môžete kľudne použiť aj mrazené kalamáre)
1 veľká cibuľa
1 strúčik cesnaku
1 veľká paradajka
400g špagety
Olivový olej
Soľ, čierne korenie (aj mix provensalského korenia, ak ho máte po ruke)

Postup
1. Očistené kalamáre nakrájame na kolieska a 1 min. varíme vo vriacej slanej vode. Nie viac, pretože ina k budú mať kalamíte gumovú chuť a textúru.
2. Cibuľu nakrájame na malé kocky a opražíme na panvici s olivovým olejom domäkka.
3. Paradajku ošúpeme (dáme ju na 30 sekúnd do vriacej vody, potom šupka pôjde ľahko dole), nakrájame na kocky a pridáme spolu s nasekaným cesnakom na panvicu s cibuľou. Osolíme, okoreníme a varíme spolu na malom ohni 5 minút.
4. Na konci pridáme do panvice al dente uvarené špagety, všetko premiešame a vypneme oheň.
Pre milovníkov výrazných chutí: Niektorí kuchári odporúčajú pridať do špagiet aj čerstvú nasekanú bazalku.
